Halloween Cupcakes (Vegan)


No Halloween banquet is complete without some gruesome looking cupcakes.. and although these cupcakes may not look the most appetising, they are very tasty! You can decorate these any way you wish, but I decided to go simple with coloured icing and this amazing cupcake set from Poundland!


Ingredients (makes approx 12 cupcakes)
1 1/4 cup self raising flour
3/4 cup white sugar
1 tsp bicarbonate of soda
1/2 tsp salt
2/3 cup soya milk
1/3 cup vegetable oil 
2 tbs lemon juice
1/2 tsp vanilla extract

Vegan Buttercream
1/2 cup of butter ie. Stork Baking Block
2 cups icing sugar
orange food colouring
1 tsp vanilla extract
dash of soya milk (if needed)

Method
1. Preheat the oven to 180℃/ 365℉
2. Line the muffin tray with 12 cupcake cases or spray oil if not using liners.
3. In a large bowl, whisk the flour, sugar, bicarbonate of soda and salt together.
4. In a medium bowl, whisk the milk, oil, lemon juice and vanilla extract together.
5. Pour the wet ingredients into the dry and whisk until the batter is just combined - do not over mix. Distribute evenly into the cupcake cases.
6. Bake in the oven for 14 - 20 minutes until the tops are slightly golden and remove from oven. Wait until completely cool until icing....
7. Make the icing by mixing the butter, icing sugar and vanilla extract together. Adc milk until the frosting is the desired consistency. Add food colouring (if desired) and decorate!
