Blogmas Day 23 - Chocolate Orange Shortbread (Vegan)

Shortbread was one of my favourite treats before being vegan, and I love experimenting with different flavours. One thing I miss around Christmas time is Chocolate Oranges, so I thought using that for the shortbread would be perfect and festive!


Makes Approx 18 Small or 10 Big Shortbread Biscuits

Ingredients
50g Caster Sugar
40g Vegetable Fat (Trex)
40g Vegan Butter (Vitalite etc)
100g Plain Flour
25g Cornflour
Pinch Of Salt
50g Dark Chocolate Chips
Zest Of 1/3 Orange
Juice Of 1/4 Orange

Method
1. Preheat the oven to 165℃ (150℃ fan) and line a baking tray (or two).
2. Cream the butter, fat and sugar together in a bowl.
3. Sift in the flour, salt and cornflour and mix well until it starts to form a dough.
4. Add chocolate chips, orange zest and orange juice and knead into the dough.
5. Flour a surface and roll out the dough until it is around 1cm thick.
6. Cut out shapes using whatever cookie cutter you like, and place on a lined baking tray.
7. Bake for around 15 minutes until lightly golden and leave to cool.
