Blogmas Day 7 - Gingerbread Cookie Recipe (Vegan)


This time of year isn't complete without Gingerbread. It's one of my favourite flavours and I love baking with it and it makes the whole house smell so Christmassy when it comes out the oven. Last year I did a more traditional recipe to make Gingerbread Men which you can read here, so this year I thought I try something a little different. 


Ingredients 
1/4 cup Nut Butter (I used Almond)
1 Tbsp Molasses
2 Tbsp Maple Syrup
1 Banana
1 cup Rolled Oats
1 Tsp Baking Powder
1 Tsp Ground Ginger
1/2 Tsp Cinnamon

Method
1. Preheat the oven to 160℃ (140℃ fan)
2. In bowl, mash the banana and mix in the molasses, maple syrup and almond butter until combined.
3. Mix in the oats, baking powder, ginger and cinnamon. 
4. Line a baking sheet with baking paper. Form your cookies (1 and 1/2 tablespoons of mixture per cookie) and place them on the baking sheet.
5. Bake for 10 - 15 minutes, remove from the oven and leave to cool until removing off the sheet.

These cookies are perfect for breakfast on the go, or as an alternative dessert to some gingerbread!
